I’ve got way too many Meyer Lemons — and since they are sooo good, I have to do something with them. We had a little freeze here so we had to pick them all at once. Now I have them stored outside where it is cold, and I’ve given some away, but I have started juicing them and freezing the lemon juice. I even got my granddaughters to help me.
We make up the lemonade concentrate, and then when you want to make a pictcher of lemonade, it’s really quite easy. Mix 1/3 cup of concentrate with 2/3 cups of water.
You can freeze the lemon juice for a year, or you can freeze the lemonade concentrate. I just happen to have so much lemon juice, that I found it takes up less room the freezer to just freeze the juice.
Meyer Lemon Lemonade Concentrate:
First, make the lemonade concentrate by mixing all these together (I use a jar and shake them up)
1 cup Meyer Lemon Juice
1 cup sugar
1 cup water
Next, store it in the fridge and when you want lemonade follow these directions:
2/3 cups water
1/3 cup of lemonade concentrate
I love to add 100% Cranberry Juice — which helps cut the stringent taste of straight cranberry juice. I can’t remember if I poured the lemonade first, or the cranberry juice! But it made this cool layer:
Meyer Lemons:
Meyer Lemons are sweeter than regular lemons because they are really a cross between a lemon and an orange. They were brought here from China. This tree is a great producer. I like to pick them and then let them sit on the counter until the rinds become softer and they seem to produce more juice.
- Lemonade Concentrate:
- 1 cup Meyer Lemon juice
- 1 cup sugar
- 1 cup water
- Lemonade:
- 1/3 cup lemonade concentrate
- 2/3 cups water
- For the Lemonade Concentrate:
- Mix the 1 cup of lemon juice, 1 cup of sugar, and 1 cup of water in a larger jar or container with lid. Stir or shake until the sugar dissolves.
- For the Lemonade:
- Mix 1/3 cup of lemonade concentrate with 2/3 cups of water. Stir. Pour over ice.
