I don’t quite remember when my mom started to bake these yummy bars — but they are made with oats, brown sugar, peanut butter and of course, chocolate. It’s one of my favorites, and I think it is healthier than a candy bar because of the oats.

 

Plus, I don’t gain weight when I eat these. If I make a batch in the morning I’m more likely to finish my work. Writing that paper becomes a breeze, tasks are manageable, cleaning up is no longer a chore. I feel like I can deal with anything. Life just seems easier and happier. I must be putting something else in these bars —

Of course, I do have to be careful not to over do on these  —  I’m sorry to say that too much in one day can leave you feeling a little sick.

My mom got this recipe from a Girl Scout or Brownie who was selling home-baked goods — so to contribute to the scout cause my mom bought a plate of these morsels. You know, support the troop. She ate some on the spot, and loving them, asked for the recipe. In fact my mom offered to pay for the recipe. And so she did — and got this recipe, way back in the 1970s I presume.

Here’s a classic photo of me when I was a Girl Scout, circa 1965 — Troop 127 and as you can see, I had not earned any badges yet. But check out that classic lounge chair with wheels in the background. I remember playing ambulance with it — putting my younger sisters on it and wheeling it around the yard. I’m pretty sure my mom still owns that thing.

These are not your ordinary Girl Scout Cookies:

Chocolate Peanut Butter Oat Bars
Recipe Type: cookies

Ingredients
  • 2/3 c butter
  • 1 c brown sugar
  • 1/2 c light karo syrup
  • 4 c old fashion oats (not the instant or quick cooking)
  • 6 oz semi sweet chocolate pieces
  • 2/3 cup peanut butter
Instructions
  1. Melt the first three ingredients in a pan over the stove.
  2. Add the oats and stir.
  3. Remove from the heat. Pour into a 9 x 13 pan (that has been sprayed with Pam first.)
  4. Bake at 350 degrees for 15 min.
  5. After they are out of the oven, let them sit for about 20 minutes, then spread on the topping.
  6. Chocolate Topping:
  7. Take 6 oz semi-sweet chocolate chips and 2/3 c peanut butter and melt them together in the microwave. Stir until smooth.
Notes
Refrigerate and hide them away. Share with those you love who need a boost.
